Sagol kalguksu · beef-bone noodle soup
Order the sagol kalguksu, hand-cut wheat noodles in a mild, milky ox-bone broth with a few plump dumplings floating in it. Add an order of the royal-style wang mandu for the table - you can watch them being folded by hand on your way in.
Kalguksu refers to noodles cut from rolled dough. Mandu dumplings are a useful extra to share.
