Handmade mandu
Order the Gaeseong mandu-guk, fist-sized handmade dumplings in a clean beef broth - the Gaeseong style uses no glass noodles, so the filling tastes purely of pork, tofu and greens. If there are two or more of you, the dumpling hot pot is the more generous way to eat it.

An institution for a reason. This Michelin restaurant serves the most gorgeous homemade dumplings and soups. I went vegetarian and had the special summer soybean soup, which was rich and incredible, and the giant mushroom dumplings. Both dishes were impeccable. Staff were helpful
